There are only a couple states that can rival Texas as far as cuisine goes. California & New Mexico come to mind. But for Louisiana to be so close to Texas and have food so different, it's got to be right up there. (yes New Mexico and Texas are also neighbors, but the population density isn't quite the same as it is along the Sabine). Here are my favorite foods that aren't slow smoked or wrapped in a tortilla:

Seafood gumbo (with potato salad):
Fried catfish and alligator. Tastes better with family at Erinn's uncle's fishing camp:
